COPENHAGEN! To my Danish friends - or anyone traveling to the CPH area - I am coming to Denmark this summer, and together with @livingyolates, hosting a half-day mini retreat on August 6☀️Golden Ground will celebrate the late summer energy, the golden light, and ground us as we integrate the harvest of the season and prepare for the transitions ahead☯️This transformative and deeply balancing experience will begin with an opening circle, and a 90-minute Living Yolates session with Mikkala to release tension and stagnation, opening up entire body to free flow. Elements of yoga woven throughout will allow us to centre and balance into the energy of late summer - balancing the yin and yang within and around us. The movement portion will melt into a beautiful and transformational 90-minute Breathwork session led by me, to further open up the body’s many channels even more. Align with what truly matters to you, heal from the inside out, and deeply connect with your essence. We will integrate the experience with a closing circle. Mikkala and I are very excited to be together again in Copenhagen, where it all began! 🐟Mediterranean Mackerel Salad🥬🫒I’ve really been committed to meal prep lately. Not the kind that involves an entire Sunday in the kitchen, but mindfully making more than I need during a weeknight cooking sesh so that my future self has something ready-to-munch when hunger strikes. It saves me a lot of time and mental load in the long run, while keeping me nourished with whole foods that support me in feeling my very best😍Enter the Mediterranean Mackerel Salad - a super simple and delicious alternative to tuna, that is rich in omega-3 fats and protein, with rich flavours that really satisfy. If you’ve tried tinned mackerel in the past and found it a bit “fishy”, I encourage you to try this version, which is mixed with mediterranean flavours like olives, roasted peppers, sun-dried tomatoes, and lemon. 🍓Rhubarb Ginger Strawberry Crumble🫚 My latest recipe, now live on Grow! We are in peak rhubarb and strawberry season here, and this crumble is the most delicious way to celebrate! Packed with tart rhubarb and juicy-sweet berries, I added ginger to the mix to play off of both of these early summer flavours. 🫚Ginger’s spice and warmth pair so beautifully with the fruit, giving an unexpected, but welcome edge to the familiar. 🌰I made the crumble topping heavy on the nuts, since almonds and strawberries are a match made in heaven! 🍒The secret to a superior chia pudding is blending it! Here’s my recipe for Cherry Pomegranate Chia Pudding that makes enough to nourish you through a whole week of breakfasts😋💗Cherry Pomegranate Chia Pudding Makes 6 cups / 5-6 servings Ingredients: 1 can coconut milk (400ml / 13.5oz)1/2 cup / 85g chia seeds600g / 1.32lbs. fresh or frozen dark cherries, pitted1/4 cup / 60ml freshly squeezed lemon juice 2-3 Tbsp. pomegranate molasses(sub with maple syrup or honey)Generous pinch flaky sea salt, if desired Greek yogurt, to serve if desiredDirections:1. In a container with a lid, combine the coconut milk and chia seeds. Stir well to combine, cover, then place in the fridge overnight.2. The next day, place frozen cherries, lemon juice, pomegranate syrup, salt, if using. Blend on high until relatively smooth.3. Add the soaked chia and coconut milk mixture. Blend on high until completely smooth. Taste and adjust flavours as desired.4. Transfer mixture to a large storage container, or portion it out into several smaller jars. Store in the fridge for up to 7 days. Serve with Greek yogurt, fruit, and granola if desired. It’s quite literally the first summer-y day here so all I have on my mind is picnic-ing!🥪🧺 I cannot wait to eat this Tzatziki Chicken Salad outside on a blanket with the dappled light coming through the trees, a sparkly drink in hand, fresh fruit, crunchy chips…are you with me?!I took two of my favourite things, tzatziki and chicken salad, and brought them together for an incredibly delicious and satisfying combo. Because why not? These two taste like they were made for each other💞 The creamy, dill-spiked, garlicky sauce is absolutely perfect with juicy roast chicken, in wraps, on sandwiches, crackers, lettuce cups - whatever suits your fancy. I love adding some pickled red onions on top for extra brightness and crunch! The recipe is now up on my membership site, Grow. The Strawberry Rhubarb Rose Compote recipe that I’ll be sharing is just one way to enjoy all of it!🍓✨This compote is good on *everything*.
