🍓Rhubarb Ginger Strawberry Crumble🫚 My latest recipe, now live on Grow! We are in peak rhubarb and strawberry season here, and this crumble is the most delicious way to celebrate! Packed with tart rhubarb and juicy-sweet berries, I added ginger to the mix to play off of both of these early summer flavours. 🫚Ginger’s spice and warmth pair so beautifully with the fruit, giving an unexpected, but welcome edge to the familiar. 🌰I made the crumble topping heavy on the nuts, since almonds and strawberries are a match made in heaven! Instead of a grain-based flour, I used almond flour to add richness, fibre, and protein, creating a super satisfying end result that makes this dessert perfect for breakfast😉Get the full recipe on Grow, my membership community. 🍒The secret to a superior chia pudding is blending it! Here’s my recipe for Cherry Pomegranate Chia Pudding that makes enough to nourish you through a whole week of breakfasts😋💗Cherry Pomegranate Chia Pudding Makes 6 cups / 5-6 servings Ingredients: 1 can coconut milk (400ml / 13.5oz)1/2 cup / 85g chia seeds600g / 1.32lbs. fresh or frozen dark cherries, pitted1/4 cup / 60ml freshly squeezed lemon juice 2-3 Tbsp. pomegranate molasses(sub with maple syrup or honey)Generous pinch flaky sea salt, if desired Greek yogurt, to serve if desiredDirections:1. In a container with a lid, combine the coconut milk and chia seeds. Stir well to combine, cover, then place in the fridge overnight.2. The next day, place frozen cherries, lemon juice, pomegranate syrup, salt, if using. Blend on high until relatively smooth.3. Add the soaked chia and coconut milk mixture. Blend on high until completely smooth. Taste and adjust flavours as desired.4. Transfer mixture to a large storage container, or portion it out into several smaller jars. Store in the fridge for up to 7 days. Serve with Greek yogurt, fruit, and granola if desired. It’s quite literally the first summer-y day here so all I have on my mind is picnic-ing!🥪🧺 I cannot wait to eat this Tzatziki Chicken Salad outside on a blanket with the dappled light coming through the trees, a sparkly drink in hand, fresh fruit, crunchy chips…are you with me?!I took two of my favourite things, tzatziki and chicken salad, and brought them together for an incredibly delicious and satisfying combo. Because why not? These two taste like they were made for each other💞 The creamy, dill-spiked, garlicky sauce is absolutely perfect with juicy roast chicken, in wraps, on sandwiches, crackers, lettuce cups - whatever suits your fancy. I love adding some pickled red onions on top for extra brightness and crunch! The recipe is now up on my membership site, Grow.
