✨🫒Warm Rosemary-Garlic-Orange Olives🫒✨If you’re entertaining this holiday season, you have to serve these! Warming olives are a next-level move that few will see coming, but all will be obsessed. It’s SUCH a game changer, even though it’s the easiest thing to do! 🫒You may remember that I rarely heat olive oil, but in this case, it really is important to create an infusion. However, we’re not going to over the smoke point - the temperature at which an oil burns. Keep the heat low and slow, and you’ll be sure to preserve the temperature-sensitive compounds in the oil. Not only that, but you’ll allow the aromatic ingredients to really shine, instead of becoming bitter. 🫒It doesn’t really matter which olives you use for this recipe, any type of green works well. I used Manzanilla but Castelvetrano, Cerignola, Gordal, or Picholine would also be delicious. The one thing you have to make sure of, is purchasing olives with the pits! Pitted olives have an off-putting mushy texture, since their insides are exposed to brine for months or years. Buying olives with the pits ensures a taught yet tender texture, and superior flavour. 🫒Once marinated, these olives make a beautiful holiday gift, or contribution to a cheese board. Re-warm on low heat when desired. Ingredients:3-4 Tablespoons high quality olive oil (cold pressed, organic if possible)2-3 cloves garlic, as desiredZest of 1 orange1-2 sprigs fresh rosemaryCrushed chilli flakes, as desired750ml brined green olives with pits, drained Directions:1. Warm the olive oil in a medium saucepan over low heat.2. Add the garlic, orange zest, de-stemmed rosemary and chill flakes. Bring the mixture *just* to the simmer - be careful not to boil. Let the aromatics simmer for 5 minutes to infuse.3. Add the drained olives, and fold well to coat. Let warm at a very low temperature on the stove for 10-15 minutes, stirring often. When the olives are fully warmed through, they’re ready to serve.4. Place in a warmed dish and enjoy immediately. Store leftovers in the fridge, and re-warm over low heat as desired. So I’m really glad I preemptively made a big batch of this soup to nourish us! ☁️This ultra-smooth and impossibly creamy potato-leek soup is a spin on the classic, incorporating silky white beans for extra fibre, protein and ultimate satisfaction. You can use any white bean variety you have on hand: navy, butter, great white northern, cannellini etc. My recipe is fully vegan, but feel free to use bone broth if desired. 😱What is that knobby, quite frightening-looking root vegetable?! It's celeriac (or celery root), my friend. You’ve probably passed by it at the market or grocery store a few times, maybe even let out a shriek as you did so😉 Well, don’t judge a book by its cover; celeriac is delicious, incredibly health-promoting, with a flavour perfect for the fall - and it's the featured ingredient in my November newsletter, coming out tomorrow!🦴Key nutrients in celeriac include calcium to help maintain the acid/alkaline balance in the blood; iron for oxygen transport; magnesium to sustain bone integrity; and zinc to keep your immune system strong. And the water-soluble fiber in celeriac lowers cholesterol and may reduce the risk of heart disease. It is also beneficial to the nervous, lymphatic, and urinary systems of the body.🍲I love dry-roasting celeriac in big batches to have the creamy, mild-tasting roots at the ready for lunches and dinners, to blend into soups, add to stews, and I'll even freeze some after cooking to add to smoothies (trust me!). I’ve been enjoying them on roasted vegetables, folded into scrambled eggs and steamed grains, with grilled fish, and creamy pasta dishes.
