I guess you could tell from the radio silence that something major was up. Well, I am more than elated to tell you that my little son has been born, along with two very proud parents. He came into the world calmly and peacefully at home, in the kitchen of all places. Can you believe that?! Although we had planned to be here, we never imagined that the great event would take place in that particular room. It certainly was meant to be  – it’s where all the magic seems to happen in this house.

When I was a little girl, of no more than seven, I used to walk around with a pillow under my t-shirt pretending to be pregnant. Suffice to say that I always knew that I wanted to be a mother (and that I thoroughly freaked out my parents), and here I am now, on the “other side” as it were. It feels surreal to look down at this perfect little person and know that we will be connected forever. My heart is bursting.

However, I cannot even tell you how difficult it’s been to find just a few hours to write this post, but then again, duh (cue laughter from every parent reading this). I think my old work-a-holic brain and my new mama brain need to have a serious chat and sort some things out. Between trying to write a cookbook, keeping up with the blog, and taking care of an infant ‘round the clock (sleep? Ha!) I may just have to lower my expectations. Got any advice on that one? Sure. Get back to me when you can.

I had a lot of help the past few weeks with my husband on paternity leave and my mom visiting from Canada, but since both have left, I will say that these little Spaghetti Squash Baby Cakes have saved me. I made a large batch right after giving birth, stored the cooked ones in the freezer and take out a couple at lunch when I have absolutely no time to make anything half decent. I actually discovered that I can just pop them in my toaster! Brilliant. With a simple salad and a slice of hearty bread, it’s a really lovely little meal that makes me feel nourished and normal (well, somewhat).

Full-Power Winter Squash
Spaghetti squash is a powerhouse veggie. Unlike summer squash (zucchini, crookneck, pattypan), winter squash (spaghetti, butternut, acorn) has had a lot more time to develop and pump itself full of vitamins and minerals throughout its lengthy life on the stem. We’re talking oodles more vitamin A (in the form of beta-carotene), vitamin C, manganese, potassium, and even some extra dietary fiber thrown in just for kicks. This combination of nutrients spells good news for asthma sufferers, those with heart disease, elevated cholesterol, or inflammatory conditions such a rheumatoid and osteoarthritis.

The other bonus? Nature designed summer squash to be rather delicate, with a high water content for those hot summer days when we need a cool down. Naturally, their shelf life is rather short during our abundant harvest season when produce is plentiful. On the flip side, winter squash has a tough outer skin and lower water content, which allows it to be stored for a very long time – some varieties up to six months. This means that we can keep these vitamin bombs around for a long time after the first frost to provide our bodies with the nutrition we need to see us through the long months of winter when there is nothing fresh in sight.
Put that in your oven and roast it!

Spaghetti Squash Baby Cakes are savory and satisfying, deliciously moist with a little crunch around the edges. I added some salty sheep cheese because I love it combined with the sweetness of the squash, but you could perhaps use nutritional yeast instead. I wish I could say I’d made a totally vegan version of these, but I am craving eggs like crazy lately so I used one in the recipe. I cannot guarantee the effectiveness of chia or flax gel holding these puppies together, so I would suggest a vegan egg replacer if you want to go that route.

The real gourmet addition to this dish is the crispy fried sage; one of those incredibly simple delights that shocks you with flavour. I also love the little bit of crunch it imparts, adding another texture to the somewhat soft and creamy cakes. The sage needs to be cooked “to order” so don’t fry it all if you’re planning on storing leftovers in the freezer. You can also skip the fried sage altogether, but I highly recommend it. It’s a very rewarding little supplement, as you’ll see how something that is so easy to make can elevate a dish to great new heights. Fried sage is also delicious on pasta, risotto, gnocchi, quinoa, eggs, and soup.

  • These were so delicious! I roasted the kale with sausage and red onion. I also had some ricotta in the fridge that needed to be used, so I zested half a Meyer lemon into it with a little of the juice, nutmeg and salt/pepper. We threw that on top with the fried sage and it was amazing! Thank you so much for your recipes. I have been following your blog and I have found it very inspiring.

  • I just love these squash cakes! I make them every couple of weeks and have found they are fantastic for breakfast, lunch or dinner. I have used sage powder (organic) and that has worked great too. I have tried several cheeses in them and am going to try the nutritional yeast in this week’s batch because I have never tried that before. Thank you for sharing such a versatile recipe.

        I haven’t tried it without the egg, but because it’s the binding agent in the recipe I would recommend using a vegan egg replacer for sure instead of simply omitting it.

  • I love these yummy cakes! I’ve been doing the whole living detox plan from 2012 and 2013 with a friend again this year and we are incorporating some of your other recipes for variety.     I made these in the grown-up version with spaghetti and kale+parsley+walnut pesto and the weaning version of mini patties before the seasoning and garlic were added in. Easy to grab, but soft enough for little mouths – they were gobbled up by baby Lila, who is usually a fusspot.

    Thanks for sharing this recipe! I used sage to wean my first daughter, so I went very light on it this year while nursing my own little one when I was cooking the turkey. But man, it lends a great flavor! I haven’t tried it with this kind of squash yet…I was a bit scared, so I replaced the spice with thyme. Still such a yummy treat!!

  • I made these last night and they were quite tasty. I occasionally eat meat, but not super often, and I liked that they reminded me of meatballs…but no meat. (And no strange fake meat.) It occurred to me to add pine nuts about halfway through balling them, and found that it was a nice addition.

  • A huge congrats! What a wonderfully chaotic adventure parenthood is, eh! I can so relate to the balancing act of being a mother and a workaholic. I am a midwife/textiles junkie, and a mother of two young ones (a 7 year old, and an 8 month old). I still haven’t figured out how to balance everything, but I am learning slowly. If there is one thing I can say, time goes by far too quickly, and those early days are gone in an instant. I am learning to play with my children and to let time slow down a bit. I am savouring these precious times in which my kids are still actually wanting and allowing me to play with them and to let me cuddle them, because it won’t always be this way. Time for me and my work is still super important, and that is where my partner and I negotiate parenting, playing and time to ourselves and also time together as a couple and of course as a family.   • Welcome to the club! There’s nothing like it in the world. It’s like someone has flip the lights and everything is clearer… put into perspective. I’m a mama of two girls, 6 and 2. My advise – don’t worry about getting things done. If you’re a list maker, only put two items on the list a day. And one item should be something for you – nap, bath, shower, rest time, book, movie… something just for you. In such a short time you will be a busy mom of a toddler or a school boy and the baby time will be gone. Just enjoy the baby schedule now. It’s definitely hard and sleepless, and a HUGE change, but it’s all worth it. I’m sure you’ve heard this a lot, but there’s nothing like a newborn especially your first. Much love.

  • Congratulations! As a mom of 3 (19, 5, 3 1/2) the best advice is: sleep when your newborn sleeps. The house will get cleaned eventually. Your routine will take shape as your baby boy lets you know what he needs and when he requires it. Next, when you’re rested, shower, it just makes you feel human again. After that do what makes you feel YOU, whatever that is, posting on your site, gardening, anything. You are still you not just Mom. Reading your post brought me right back to my time with my newborns. I feel that joy all over again! It goes by faster than you can even imagine. Hold them while they want you to because they will leave the house one day and you will miss them. One more thing: have at least 2 sets of sheets and blankets and waterproof mattress pads. When that diaper leaks in the middle of the night, you’ll understand why.

  • Congratulations! From a mum of 22,20,17&15 year olds….take this early time as a wonderful bubble for the two of you. Everything else can wait! Really! You will sleep again and be yourself again but you’ll never again have the luxury of this specific time of new motherhood(next time around you will have an older child who ties you to reality) I know that the saying ” they grow up so fast” sounds absurd but it’s oh so true! I remember eating standing up, out of the pot with a wooden spoon, other wise my daughter who didn’t sleep very much would wake up. She is now 22 and still doesn’t sleep lol!

  • Congratulations New Mother, New Family -and thank you for your wonderful recipes. I want to warn you…if you are breastfeeding, sage can be “drying” your milk. I recomend to avoid it until you want to actually stop breastfeeding. Fenugreek works opposite. Good luck and lots of love to the New little root

  • Aww congratulations Sarah! You look amazing! These look great! As as vegan, I found myself really craving eggs about a month ago, and then realized that I hadn’t replaced my empty jar of coconut oil in a while. Once I introduced the coconut oil back into my life the egg cravings went away. Not that there’s anything wrong with you eating eggs, I just thought I would throw my experience out there for ya! 🙂
